Third and last appointment with the weekly section "The recipe of the day" where Giovanni Gigante re-explores the recipes of the agricultural tradition from Ginosa: "Actually this is like a shot from my childhood when I lost myself at my grandparents' farm and I used to camouflage myself in the colorful garden with all the products of the season." Frisella is one of the simplest and yet most nutritional specialties made in Puglia. It's perfect for every occasion: for aperitivo or as a snack, but also at breakfast!

Ingredients for 4 people:
  • 4 durum wheat "friselle" 
  • 12 cherry tomatoes
  • q.s. Lemon Evo oil Frantoio Felice Bitetti
  • q.s. basil
  • q.s. salt
  • q.s. oregano


Dunk frisella in water and let it soften a little. Squeeze the tomatoes, add salt, lemon evo oil, oregano and some leaves of basil.
